Braised Chicken with Bitter Gourd and Black Bean

Ingredients:
Chicken (cut into chunks)
1 medium size bitter gourd (cut into 1cm thick strips)
2 tbsp black bean (slightly pound)
1 big onion (cut into quarter)
Few slices of ginger (slice thinly)
3 cloves of garlic (chopped)
2 tbsp light soy sauce
Dash of pepper
Oil for frying
1 cup water

Seasoning:
Soy sauce
Dark sauce
Sugar
Corn starch
Water

Methods:
1. Marinate chicken with 2 tbsp light soy sauce and dash of pepper. Leave for 30 minutes.
2. Heat up the oil, stir fry chicken until just cooked. Leave aside.
3. Heat up a bit of oil and throw in garlic, ginger and big onion. Cook until fragrant. Add in black bean and stir fry a while until the smells come out.
4. Add in chicken and bitter gourd. Stir fry for 2 minutes. Add in water, soy sauce and sugar. Cook until water is boiling. Add in dark sauce and taste. Add whatever that is not enough (soy sauce, sugar).
5. When the taste is fine, cover and let it simmer in low fire for 10 mins. 
6. Thicken the sauce with corn starch mixture.
7. Serve!
